Pemaquid Lobster & Seafood Gluten-free Salmon Spread

Our Dairy-Free Roasted Smoked Salmon Spread is an elegant accompaniment to crostini, crackers or vegetables. It is also good spread onto a sandwich or toasted bagels.
Available in 8 ounce containers.

NEW HARBOR CRAB DIP

New Harbor Crab Dip

A party favorite. This hot dip has a liberal amount of Gulf of Maine crab combined with cream cheese, sour cream and a hint of sherry blended with light seasonings. Alternately, it can be used as a topping for pasta or rice. 10 ounces

Roasted Smoked Salmon Pâté

We roast and smoke our own salmon using select hard woods harvested on our own land. It is then mixed with cream cheese, sour cream and other ingredients that makes a great compliment to your favorite cheese platter on crostini or morning breakfast bagel.

SMOKED WHITE FISH PÂTÉ

Smoked Whitefish Pâté

This pâté is made with Finnan Haddie ( smoked haddock) mixed with cream cheese, sour cream and light seasonings for a spread on crackers, pita chips, vegetables or bagels.

ROASTED SMOKED SALMON

Roasted Smoked Salmon

Our hand cut roasted smoked salmon is cured and smoked in small batches. Lightly smoked with native Alder wood this makes a great appetizer or compliment to your favorite dish where smoke is desired. Sold in random weights from 4-8 oz packages.

SCALLOP CASSEROLE

Scallop Casserole

Our scallop casserole is made with wild caught deep sea scallops from the North Atlantic covered with a rich cheese sauce topped with panko crumbs. These casseroles are a great stand alone meal or as a topping over pasta or rice. Available in 10 oz or a crowd pleasing 29 oz size.

OLD ENGLISH FISH PIE

Pemaquid Lobster & Seafood - Old English Fish Pie

Real comfort food here. These Shepard like pies contain white fish, salmon and smoked haddock covered with a cheese sauce topped with real mashed potatoes (Maine grown). This recipe has received many thumbs up from our English friends as a dish they remembered growing up. Available in 12 oz & 42 oz pie tins.

LOBSTER MAC & CHEESE

Pemaquid Lobster & Seafood, Lobster Mac 'n Cheesae

Four different cheeses go into our mac & cheese along with a generous amount of Maine lobster with a panko bread crumb topping. Available in 13.5 oz loaf tins.

MARINARA CLAM SAUCE

Pemaquid Lobster & Seafood Marinara Sauce

A light marinara sauce is loaded with clams and seasoned perfectly with garlic herbs and spices. Great on pasta or as a pizza sauce. Available in 16 oz .

Our Salmon Burgers are crammed with North Atlantic Salmon. We use very little bread crumbs and they are lightly seasoned with dill. 3.5 ounces each.

HADDOCK CHOWDER

Pemaquid Lobster & Seafood Haddock Chowder

Our haddock chowder is made from wild caught Gulf of Maine haddock, potatoes, onions and whole milk. The broth is made from a long simmered fish stock that we make ourselves. Available in pints. Gluten free.

SWEDISH STYLE HADDOCK CHOWDER

Prepared identically as the regular haddock chowder with the addition of finnan haddie ( smoked haddock) to give it that distinctive smoked flavor. Gluten free. Pints only.

FISH CHOWDER

We never know what combinations of wild caught Gulf of Maine fish we are going to use in every batch of fish chowder but each container is surely to please. Gluten free. Pints and Quarts.

LOBSTER BISQUE WITH LOBSTER

Pemaquid Lobster & Seafood - Lobster Bisque

This rich lobster bisque is loaded with flavor from our own lobster stock that has been simmered for hours enhanced with cream sherry*.

*Alcohol has been previously burned off.

FISH STOCK

We use only the freshest fish racks (head and bones) and vegetables combined with herbs and spices to make our fish stock. After simmering for several hours we strain out the solids This will make your own home made fish chowder pop with flavor. Gluten free. Available in Pints and Quarts

Seafood Safety& Handling

Proper care and handling of fish and shellfish is critical to maintain the safety and quality of the product. Seafood is highly perishable. When purchasing your seafood from us at the farmers market make us your last purchase. Beware of time and temperature. Limit on how long the fish and shellfish are unrefrigerated. Keep foods out of the danger zone (40°F-140°F). When purchasing seafood from us we always provide ice to get your product home safely.

FISH

1. Store product at or near 32F, ideally, place product in a sealed container and submerge in ice. Store in refrigerator.
2. Drain excess water from the container.
3. Prior to cooking rinse product in cold running water to remove any liquid that has accumulated on the fish while in the storage container.
4. Fish must be cooked to 140ƒ or above.
5. The shelf life of fish depends on its quality at the time of purchase and handling afterwards. In general, use fish quickly-within one to two days.

SHELLFISH

1. Oysters and mussels in the shell should be stored in a shallow dish in the refrigerator with a damp cloth or paper towel.
2. Never put shellfish in water or in an airtight container.
3. Discard any open shells prior to cooking.
4. Discard any closed shells after cooking.
5. In general, mussels in the shell should be used within 2-3 days. Clams and oysters in the shell within 7-10 days. If some shells open during storage, tap them. They will close if alive. If not, discard them.
